I used strawberries from a farm outside Sydney. Pureed strawberry, macerated strawberry and fresh strawberry. Egg white and sugar. I think they will be good.

A zesty lemon paleta with yoghurt. Truly refreshing.

Rock-melon and yoghurt.

Unexpectedly, the best combination. A generous squeeze of lemon and some zest. Utterly delicioius!

Spicy, creamy chai paleta

Cardamom, cinnamon, mace, nutmeg, black pepper, star anise, ginger and black tea.
